On Andros’ signature dish is the frotalia, a hearty omelette the can be baked or fried and is usually made with seasonal vegetables, local cheese and sausage. The on Santorini, you have tomatoes as the main produce that this is featured on many greek recipes and meze.

Usually, they are sun-dried and placed in jars filled with olive oil to give them a longer life. While visiting Santorini don’t leave without tasting the Tomato fritters, made with either fresh tomatoes or sun-dried tomatoes.
